It’s summer and I have “travel” on my mind. That, and “adventure.” Perhaps that’s why we’ve been going on long-ish family hikes, tentatively planning a trip to Washington State, and dreaming about going on a camping trip (soon!).

The world is full of darkness, scary people, and broken hearts. Fortunately, it’s also full of people that are kind, good, genuine, and warm – people like Nicole Bateman. She and her husband are both the kind of people that spread care and service to everyone they meet. It’s not a contrived kind of thoughtfulness, either – it springs from deep down in their hearts.

One such “chain” is FOX Restaurant Concepts – “a collection of original, thriving boutique restaurants in Arizona, Colorado, Texas and Kansas.” I’ve only been to two of their restaurants, but if those experiences are any indication, I would recommend them all. The atmospheres are modern and decidedly upscale – and the food is fresh.
